Raspberry Rice Pudding Parfait


  • 2 servings (cups) of Vanilla Rice Pud
  • 1 cup of frozen or fresh raspberries
  • 1 tbsp chia seeds
  • 2 tsp lemon juice
  • 1 tbsp of granulated sweetener of choice


  1. To prepare the raspberry chia seed jam layer, heat 1 cup of raspberries in the microwave for approximately 1-1.5 minutes.
  2. Add chia seeds to raspberries, 2 teaspoons of juice, and granulated sweetener. Stir well.
  3. Refrigerate for at least 30 minutes.
  4. Add 1 cup of Rice Pud into a parfait glass (or tall glass of choice).
  5. Add raspberry chia jam layer.
  6. Repeat with another Rice Pud layer and raspberry chia layer on top.
