Raspberry Rice Pudding Parfait
INGREDIENTS
2 servings (cups) of Vanilla Rice Pud
1 cup of frozen or fresh raspberries
1 tbsp chia seeds
2 tsp lemon juice
1 tbsp of granulated sweetener of choice
METHOD
To prepare the raspberry chia seed jam layer, heat 1 cup of raspberries in the microwave for approximately 1-1.5 minutes.
Add chia seeds to raspberries, 2 teaspoons of juice, and granulated sweetener. Stir well.
Refrigerate for at least 30 minutes.
Add 1 cup of Rice Pud into a parfait glass (or tall glass of choice).
Add raspberry chia jam layer.
Repeat with another Rice Pud layer and raspberry chia layer on top.
Enjoy!
